SUMMER PEACH SALAD

If you haven’t picked up peaches yet this season, add them to your next grocery list! They are sooo good right now. I like to get creative with my fruit. I especially love to add fruit with different vegetables and herbs to make refreshing salads that pair well with any protein.

It’s important to know that peaches are part of the “dirty dozen” list. So when you’re purchasing your peaches you want to always purchase ORGANIC. But, just because they are organic does not mean that they do not contain pesticides, also. So be sure to rinse them well under cold water, rubbing the skin as you rinse them. If you want to get aggressive you can also soak the peaches in a solution of water and vinegar (1 part vinegar to 3 parts water) for a few minutes. After soaking, rinse them thoroughly with cold water to remove any vinegar taste.

INGREDIENTS: Makes 4 servings

  • 1 Large Peach
  • 1 Large Tomato
    • I purchased mine from a local farm – so good!
  • 1/2 Cup Fresh Mozzarella Balls, sliced in 1/2.
  • 2 Green Onions, diced thin
  • 1 Handful of Curly Parsley, diced into little pieces
  • Olive Oil
  • Sea Salt
  • Juice of 1/2 Lemon (or lime)

DIRECTIONS:

  1. Place all ingredients in a large bowl.
  2. Mix well together
  3. Serve with any protein!
