Pineapple Fried Rice

As we enter the cold months of the New Year, here’s a great recipe to keep the warm weather spirit alive.   When I’m craving summer yumminess this is my go-to.   This bowl is filled with a variety of nutrients from complex carbs, healthy fats, vitamins and minerals.  You can pair this with any protein of your choice – fish, chicken, steak!  The beauty of this beyond the taste is that it goes with everything.  Enjoy!

Ingredients (serving: 4):

  • 1/2 Fresh Pineapple
  • 1/2 Cup Unsalted Cashews
  • 1 Medium Zucchini
  • 1/2 Red Onion
  • 2 Cups Cooked White Rice (or brown)
  • 1/2 Tablespoon Fresh Ginger
  • 1/2 Cup Chopped Fresh Cilantro
  • 2 Tablespoon Olive Oil

Directions:

Follow the rice directions that are given and make 2 cups cooked white or brown rice.

In a large pan, saute the onion and zucchini until cooked, 8-10 mins, with olive oil.

Cut your pineapple in half and carve out the inside of 1/2 a pineapple. This can get a little messy – warning! – my advice is to cut along the sides and then cut into squares.  Use a spoon to scoop out the pineapple and chop into little squares.

Blend the rice, onion, zucchini, pineapples together and cook for a few minutes or until pineapple is slightly heated.  Remove from the heat and blend together fresh ginger and cilantro.
