Katie’s Kale Salad (4 ingredients)

So many people immediately associate eating health with being time consuming and boring. Part of my profession is to debunk this myth EVERY day. Like most people, I live a crazy, busy lifestyle so I thrive on finding nutritious and delicious meals that take 15-20 minutes to make and 5 minutes to clean up. 25-30 minute (total) meals are my jam.

Sometimes sauteeing or baking vegetables can take too much time (unless you’re making spinach!).  Creating a salad is one of the fastest ways to increasing quality nutrition into your life. Making a salad is a staple in my daily menu (if you follow me on Instagram, @thedailydiehl, you will see these salads).

This kale salad only has 4 simple, nutritious and delicious ingredients in it. It literally takes me less than 3 minutes to make this. This salad is so good that if too much kale didn’t give me a “kale baby” (lots of nutrients/fiber in kale), then I would probably eat this 3x a day.  Learn how easy and quick it is to make this below. Ingredients: 4 Servings

  • 1 Bunch Fresh Kale
  • 1/2 Large Lemon, juiced
  • 2 Tablespoon Olive Oil
  • 4 Tablespoon Sheeps Milk Romano

Directions:

Step 1: Peel the leaf of the kale off the stem and rinse well under cold water.

Step 2: Using your hands, massage the kale on the cutting board before you cut (this breaks up the density and opens up the nutrients).

Step 3: Using a large knife, chop the kale into little pieces and place in bowl.

Step 4: Coat with olive oil, fresh squeezed lemon juice and sheeps milk romano (or any fresh cheese).

Step 5: Mix well together, pair with ANY protein (chicken, sausage, steak, fish, etc.) and ENJOY!
