EASY SALMON BOWLS

I made this for the first time a few weeks ago and I honestly cannot get enough. I crave this weekly! It is now a staple recipe in my weekly menu. I normally do not like cooking proteins on the stovetop or in the oven. I literally grill every protein I eat, even in the dead of winter. But, this salmon is made in a fry pan, and holy cow it is delicious!

The best part about this meal is you can really get creative with the ingredients. This recipe includes a mango/avocado salsa with white rice but you can create any fruit salsa or sauteed veggies to this mix. You can swap out the rice and enjoy it with quinoa, couscous, or roasted potatoes. So many different options with this mix!

The second best thing about this meal is it takes – literally – 20 minutes to make. It is effortless. Cleaning is easy. You can prep, cook, and clean within 30 minutes. It’s a no-brainer and absolutely on my “quick dinner” menu list.

INGREDIENTS: 2 Servings

  • 8oz Salmon
  • 1/2 Fresh Mango, diced into squares
  • 1 Medium Avocado, diced into squares
  • 1 Scallion, finely chopped
  • 1 Tablespoon Coconut Oil
  • 1/2 Tablespoon Coconut Sugar
  • 1 Cup Cooked White Rice

DIRECTIONS:

  1. Clean your salmon under cold water. Pat dry with a paper towel.
  2. Cut your salmon off the skin (if it’s with skin) and dice into 1″ squares/rectangles.
  3. Place the salmon in a bowl and mix it with coconut sugar. Make sure the surfaces have enough sugar to carmelize the salmon when cooking.
  4. Heat a medium pan to medium-high heat. Melt coconut oil and place the salmon in the pan. Allow to cook for 2-3 (ish) minutes per side. (Cooking time will depend on the strength of your stove and the thickness of the salmon, so eyeball this. When the edges are carmelized, they’re ready to flip).
  5. While the salmon is cooking mix together the mango, avocado, and scallion.
  6. When the salmon is fully cooked – add rice to a bowl, place the salmon on top, and then the mango/avocado salsa on top. Enjoy!!

As I mentioned, you can get creative with the recipe! A cucumber would be a great addition to the mango/avocado along with freshly squeezed lemon or lime juice. Add your own flare or enjoy it exactly how it is!
