The other week I was asked what my favorite vegetable was. This is a really hard question for me to answer because I have sooooo many favorites. However, if I had to narrow it down to my #1, it would be brussel sprouts baked and sauteed with bacon. There are many health benefits to brussel sprouts – they are full of vitamins (very high in Vitamin K), minerals and they are high in fiber. Mix them together with a little bacon and you have a perfect side dish that goes well with everything; pork, chicken, fish, steak. Another great thing is this is so easy to make! Enjoy all!
Ingredients: The below will serve 2 portions.
1 Package of Fresh Brussel Sprouts
3 Pieces of Bacon
Olive Oil
Salt/Pepper if desired (I don’t need the extra salt, the bacon is salty enough but some like to add extra!)
Directions:
Pre-heat the oven to 400 degrees. Cut the brussel sprouts length wise. Add to a cookie sheet and toss with olive oil.
Place in the oven and let bake for about 10 mins – I like my brussels extra crispy so I’ll watch them but no more than 15 mins.
While the sprouts are baking, dice the bacon into little bits and cook in a medium pan on medium heat.
When the brussel sprouts are ready, toss in with the cooked bacon and let sautee for a few minutes and serve!
So so easy and one of my favorite things to eat!
