Quick Dinner!

After the WOD tonight I was starrrrrrrving so I needed to make something easy, quick and of course tasty!  I have some-what of an obsession with turning my veggies into spg for a few reasons.  One, they cook a lot faster than normal so it helps with the cook time.  Two, because I don’t eat pasta it helps fill in those pasta cravings and three, they are delicious and fun!   This meal took me all of 20 mins to make! Simple, easy, yummy!

Here you go!

Ingredients:

4 oz ground turkey 
1 small or medium zucchini
1 medium carrot
1/4 of a sweet onion 
1/2 a red pepper 
handful of fresh cilantro
handful of fresh basil
olive oil 

Directions:

Heat a tablespoon of olive oil in a skillet.

Dice your onion and pepper into small squares and add to the skillet once it’s heated.   While your onion/peppers are sauteing use a julienne peeler (or vegetable peeler) and peel your zucchini and carrot into ‘spg’ strands.

Once your onion and pepper are cooked (5 min) add the zucchini and carrots and saute it all together for 5-8 min or until the zucchini and carrots are soft.

In a separate pan cook your ground turkey meat.  Add spices if you like, I’m not really a spice girl so I keep things pretty simple – boring I know but it works for me!

While your veggies and meat are cooking add your cilantro, basil and 1/4 cup olive oil to a food processor and blend together to make a cilantro/basil pesto.

Mix the turkey meat, veggies and pesto together and ENJOY!

    Looks great! How do you prep the ground turkey…as hamburger patties and then break them apart? It almost looks sliced, a la chicken pad thai. Comes out well.
