Spaghetti Squash with Ground Turkey Meat

If you haven’t noticed already I like to make meals that are simple, quick and full of flavors!  My week schedule is super busy so I try to pick meals that are easy and less time consuming.   After a crazy week of work and my evening work outs I was so looking forward to having a rest day!  Since it’s freezing outside I’m in a bit of hibernation mode so I was looking forward to just going home after work and enjoying a warm comfort meal.  This is one of my go-to meals, it’s super delicious and healthy!  If you’ve never tried or had spaghetti squash I’m about to change your lift!  Try it!!

Ingredients:

1 spaghetti squash 
1 serving ground turkey (1 lb package is 4 servings) 
1 8 oz Hunts no salt added tomato sauce 
1/4 sweet onion 
1/2 cup dice mushrooms 
2 garlic cloves 
1 tspn oregano
1 tspn basil 
salt and pepper for taste, if desired. 

Directions:

Pre heat your oven to 350.

Slice your spaghetti squash lengthwise in half.  Take a spoon and scoop out the middle/seed area.  Add a little olive oil to the pit of the squash for each side and cover the base of the squash.   Place on a cookie sheet with tin foil faced down and bake for 45 mins (this also depends on the size of your squash. I tend to buy bigger ones so it will last me 4 servings).

20 minutes before your squash is done.   Dice your onion, mushrooms and garlic.  Saute in a skillet with olive oil on medium heat for about 10 mins or until the onions, mushrooms and garlic are a little brown.  Toss in your turkey meat and chop up into little chunks and let cook through (about 5-8 mins) and mix it all together.

Once the turkey is cooked through, add the Hunts tomato sauce, oregano and basil and mix well.  Let the sauce cook with the turkey meat for 5 mins.

Once your squash is done, take a fork and scoop out the strands in the spaghetti squash length-wise (it will peel up like actual spaghetti).

Place the spaghetti squash on a plate and top it with your meat sauce.  Add any additional spices you may like and enjoy this yummy comfort dish!
