Shrimp and Greens!

Spent the day yesterday with my family and by the time I got home I was super hungry so this is what I came up with! This is some of my favorite ingredients mixed into a pile of yummy-ness!!  This meal is great for lunch or dinner.  If I had avocado’s I would of made some homemade guac to add to the green as well! 🙂  Enjoy it! As usual, its a simple, easy and really yummy meal!

Ingredients:

8 Large Shrimp 
2 Cups Kale
1 Cup Spinach
1/4 Sweet Onion 
1/2 Pepper (I used Orange Pepper but any pepper works) 
Handful of Cilantro
Olive Oil
Salt & Pepper, if desired

Directions:

Heat a skillet on medium heat and add some olive oil.

Dice your onions and peppers how ever you like – I cut them length wise.  Once the pan is hot, add your onions/pepper to the pan and cook.  If you have garlic, garlic would go well here too.  I didn’t have any garlic 😦

Once the onions/peppers have cooked through (about 5-8 min) add your kale to the onion/pepper mix.  Kale takes longer to cook than spinach so once your kale has cooked or almost cooked add the spinach to the pan.

As your green mix is cooking, cut your shrimp in half or into 3 pcs.  Add the shrimp to the mix and cook shrimp til they turn pink and mix all together.

Top with some cilantro and chow time!
