Another Sunday Brunch success!! Since I spent most of my Saturday early mornings jumping out of bed to get to my Saturday WOD, I don’t really have time to relax and enjoy a good breakfast so Sunday’s are my favorite breakfast days. I normally love to play around and make pancakes or waffles but I’m doing the Whole30 so I haven’t been able to do that since before Jan 1st!! The challenge ends on Thursday so I’ll be sure to post some pancake and waffle recipes this month!! But in the meantime, this was really a breakfast of Champs!
Ingredients:
2 Cups cubed butternut squash
1/2 Red Pepper
1/4 Sweet Onion
3 Slices of Bacon
Teaspoon of Thyme
Directions:
Heat your skillet on medium and add a tad of olive oil.
Cut your onions and peppers into little squares and add to the skillet. Let these cook for about 5 mins.
Cut your butternut squash into little squares and add to the skillet. Since the squash is hard it takes about 15 min to cook so be patient. 🙂 Add the squash to the skillet and mix together.
Cut your bacon into little squares and add to the mixture.
Season with thyme and let cook for about 15 mins or until the butternut squash is soft.
This one is REALLY good so enjoy it with eggs how ever you like them and a side of breakfast pork sausage pattys (recipe is further down on my blog).
