Coconut Encrusted Sole

My go-to white fish is usually Tilapia but this week I wanted to switch it up!  Fairway Market has great fresh fish, they cut the filets right there in front of you so the guy sold me on Sole!  I think Tilapia is still my go-to but this was still yum!

Ingredients:

1 filet of sole about 1/2 inch thick 
1 teaspoon cumin 
1/4 lemon 
olive oil 
1/4 cup unsweetened coconut flakes 

Directions:

Cover your filet in olive oil and season with cumin and lemon.  Let marinade for about 10 mins.

Heat a skillet on medium heat.

Toss your fish in unsweetened coconut flakes on both sides and add to pan.   Cook on each side for about 5 mins (really depends on the thickness of the fish).

This will go well with any sides – califlour fried rice, zucc/carrot ‘spg’, mashed butternut squash, etc.  Pick whatever sides you like and enjoy! 🙂
