10 Minute Dinner!

Since I don’t get home til after 8 almost every night – I need to make quick meals.  I’m coming home post work out and ready to eat my entire kitchen! haha.  This meal is full of everything you need – protein, veggies, vitamins and healthy fat!

Ingredients:

4 oz chicken cut into cubes 
1/2 small zucchini 
1 cup kale 
1/2 cup diced carrots 
1/4 avocado 
tspn rosemary 
tspn thyme 
tblspn coconut oil 

Directions:

Heat a skillet to medium heat. Add the coconut oil.

While the pan is heating, dice your chicken and veggies.

Once the coconut oil has melted, add the zucchini, kale and carrots. Cook for about 5-8 minutes or until the veggies are soft.  Then add your chicken and seasonings and mix all together until the chicken is fully cooked (about 5 mins).    Mash the avocado and place on the side and enjoy!
