One of the foods I really miss being on Paleo is tuna salad. I used to eat tuna salad all the time and haven’t really since I started it because I don’t eat mayo! I’ve been missing and craving it so I bought some and was thinking about how to make a tuna salad that is friendly to my diet. A friend at the gym told me to mix it with avocado or olive oil! Brilliant!! I can’t take full credit for this one but I wanted to share it because it was soo good! A lot better than I expected! Don’t knock it til you try it!
Ingredients:
1 can of tuna of your choice
1/2 ripe avocado
Few cherry tomatoes
1/8 cup sweet onion
1/8 cup scallion
Squeeze of fresh lemon
Dash of Salt (add pepper if you like it, I don’t really like pepper on my tuna)
Directions:
Drain the tuna and add to a bowl. Mash it with a fork.
Dice the cherry tomatoes, sweet onion and scallion and add to the tuna. Mix the avocado together with the tuna and veggies. Add the salt, pepper and squeeze of fresh lemon and mix all together and dig in!
