Almond/Coconut Flour Waffle

Tonight I wasn’t in the mood to cook anything crazy and since I have a huge sweet tooth I decided to make some waffles. Mmmmm!!  So easy and really good!  I honestly can’t really tell much of a difference between regular flour waffles and almond/coconut flour!  Don’t knock it til you try it!

Ingredients:

1 cup almond flour 
1 tablespoon coconut flour 
1 egg 
1 teaspoon vanilla extra
1 teaspoon cinnamon
1/4 teaspoon baking soda
1/4 cup water
splash of honey
maple syrup 
Fruit of your choice!

Directions:

Heat your waffle maker

Mix together the almond flour, coconut flour, baking soda, cinnamon and honey together in a bowl.  Whisk the egg separately and add in to the dry mix and mix together.  The batter is going to be a little thick, add 1/4 cup of water and mix together – the water helps break it up and thins the batter.

Once your waffle maker is pre-heated, add the batter.  My waffles took about 4 mins to cook.

Once done – top with whatever fruit you like and all natural maple syrup and enjoy!!
