The weather is FINALLY starting to get nice so I’m craving summer meals!! I’m also going on vacation on Saturday so my mind is def set in tropical mode. I love tuna steaks but wanted to make something a little ‘summery’ to go with it. I’ve made strawberry and mango salsa’s before but wanted to switch it up and tried it with Kiwi – a fruit that I rarely ever eat. Always go with your instincts because it turned out really yum!! Def a good, easy and quick summer meal!
Ingredients
1 Tuna Steak
2 Kiwi
1 Avocado
Green Onion
Champagne Vinaigrette
Cilantro
Asparagus
Olive Oil
Lime
Salt & Pepper
Directions:
Dice the kiwi and avocado into 1/4 thick squares and mix with diced green onion and cilantro. Splash the salsa with a little champagne vinaigrette (white wine vinaigrette would work well too). Squeeze 1/2 lime into the salsa and place in the refridge for an hour to get it cold.
Heat your grill on medium. Saute the tuna steak in olive oil, salt & pepper.
Place on the grill and cook for 1-2 minutes on each side. I like my tuna very rare so if you like yours more well done then cook a few more minutes on each side.
Place the asparagus on the grill with some olive oil and cook until blackened.
Remove the tuna and asparagus from the grill and top the tuna steak with the salsa!
