Arugula/Cilantro Pesto Shrimp

I love to take random ingredients and puree them together to see how they turn out!  It’s amazing how simple ingredients mixed together end up tasting!  I love shrimp so I like to get creative and make different sauces to make these meals interesting!  Arugula is my favorite green and cilantro is one of my fav herbs – so taa daaaa!

Ingredients

As many shrimpys as you want
2 chopped garlic cloves
1/8 chopped red onion 
Handful of cilantro 
Handful of arugula 
Few sliced cherry tomatoes 
1/4 cup olive oil 

Directions:

Heat a medium skillet with olive oil (or coconut oil).   Add the garlic/onion and sautee until cooked and then add the shrimp and cook until pink (only takes a few minutes).

Blend olive oil, cilantro & arugula together to make the pesto.

Add the pesto to the skillet and let cook for a few minutes with the shrimp.

Remove from heat and toss in the cherry tomatoes and BOOM!
