I got a lot of attention on this meal so I figured even though it’s super easy to make, I’d add it to the blog! All you need are a few simple ingredients, 15 mins of your time and dinner (or lunch) is served! Enjoy! 🙂
Ingredients (serving size is based on how much you want to make..)
Shrimp
Kale
Bacon
Olive Oil
Avocado
Salt/Pepper
Fresh Garlic
Directions
Heat a medium sauce pan with a little olive oil and cook shrimp until pink. Season with salt/pepper.
Heat a large sauce pan and cook the bacon, once the bacon is almost cooked (I like mine crispy), add the garlic and cook the garlic until a little brown and then toss in the kale. Sautee for about 5 minutes or until soft (similar to spinach) and then add the shrimp and cook together for a minute or two. Add to a plate…
Dice an avocado into square pieces and mix together with the shrimp/kale and dig in!! 🙂

Kale is in the spinach family so similar but has as bit of a stronger taste. I love it and am on a kale kick right now! And yes, bacon and avocado makes everything taste that much better! Try it and let me know how it turns out!
