Anyone that knows me, knows that I have a HUGE sweet tooth. Instead of shoving my face with chocolate chip cookies, I shove my face with fresh berries instead. This satisfies my sugar craving the same as if I was to eat those chocolate chip cookies. I love berries for a bunch of reasons. One, I’m a nibbler. I love nibbling on everything. Two, they are deeeeeelicious. Three, berries are the best fruit you can eat – they are low fat, carbs, calories and sugar but high in fiber. They also are high in vitamins, minerals and antioxidants. So X those cookies and eat something clean, healthy, nutritious and YUMMY! Esp when it’s topped with coconut whipped cream. NOMMMMM!
Ingredients: (serving sizes depend on how much you’re making.)
Fresh Strawberries
Fresh Blueberries
Fresh Raspberries
1/2 Cup Coconut Milk (solid)
1 tspn Natural Honey
Splash of Vanilla Extra
Optional: Unsweetened Coconut Flakes
Directions:
Be sure to refrigerate the coconut milk in the refridge over night or 4-6 hours to make sure it’s cold.
Layer the fruit in a bowl however you’d like! I did strawberries, blueberries, raspberries.
Using a electric mixer or you can use a whisk, mix together the coconut milk (again, solid no liquid), honey and vanilla together until the consistency is thick. Place on top of the fruit and dive in!
Optional: If you would like to add the coconut flakes which I recommend, adds a bit more flavor. Place the flakes on a cookie sheet/tin foil and bake for about 5 mins at 400 degrees or until brown.
