Monday are my longest and hardest days so by the time I got home after a full crazy day of work and WODing, I opened my refridge and asked myself what is the fastest possible thing I can make for dinner. The weather is starting to get nice so I’m starting to crave foods like this. I’m also day dreaming of the day I’ll be living on a beach eating this every day and I can’t wait! :p This is super easy, quick, fresh, refreshing and delicious. Enjoy!
Ingredients:
1 Filet White Fish (I used Tilapia but this will be good with Halibut, Mahi Mahi, Swordfish, Cod, etc.)
1 Medium Size Tomato
1/2 Large Cucmber
1/2 Avocado
1 Cup of Diced Pineapple
Handful of Cilantro
1 Lime
1/2 Lemon
Salt/Pepper
1 tspn Cumin
Olive Oil
Directions:
Heat a medium pan on medium heat and coat the bottom of the pan with Olive Oil. While the pan is heating (you don’t want this to heat too fast so you don’t burn/over cook the fish so let the pan heat slowly) start to dice your salad.
Dice the tomato, cucumber, avocado, pineapple into small pieces. Mix together with fresh squeezed lime and lemon juice and diced cilantro (about a handful).
Spice the tilapia with salt, pepper and cumin. Make sure the pan isn’t too hot and place in the pan. Cook about 3 mins on each side.
Place the fish on top of the salad and enjoy! 🙂
