If you haven’t figured out already, one of my favorite things in the kitchen is to turn my fruit into salsa. I am in love. It goes with everything – meat, pork, chicken, fish or simply on it’s own or topped with mixed greens. I eat fruit salsa year round because I love it so much. This is my first time making it with papaya, I wasn’t really sure how it was going to come out but I was amazed at how good it was! Try this out, top it with fish or just simply eat it on it’s own. So good!
Ingredients (serving size 6):
1/2 Papaya
1 Mango
1 Cup Sliced Heirloom Tomatoes
Handful Cilantro
1 Lime
1/2 Lemon
Directions:
Slice the papaya, mango into small square chunks.
Dice your Heirloom Tomatoes into 4ths.
Chop the cilantro into thin shreds.
Blend all of the above together and squeeze fresh lemon and lime juice and mix well together and enjoy – it’s as simple as that! 🙂
I too love fruit salsa. I’ve had it all my life thanks to my Mom’s Spanish roots. It’s surprising how many people haven’t had it though. It does go with everything – especially meatssss yum!
