Avocado Egg Salad or ‘BLT’ Avocado Egg Salad

My favorite meal of the day is Breakfast.  I look forward to it every day that I wake up.  I eat eggs and bacon every.single.day and I never get sick of it, I just love looove eggs and bacon.  I also eat a lot of avocado so I’m really not sure why I’ve never thought of this before.  I had a really good work out yesterday morning and was starvvving. I came home and whipped this together and was amazingly surprised on how good this was.  It’s kind of hard not to be when its 3 of my favorite things – eggs, bacon and avocado.  Holy sh*t balls this was good and I HIGHLY recommend.  This will most likely be my breakfast every day this week!  Don’t forget to eat your breakfast, its the most important meal of the day and this is packed with protein and healthy fats to get you going for the morning!

Ingredients (serving size: 1)

4 Hard Boiled Eggs (2 white, 2 regular)
1/2 Avocado
1/4 Cup Sliced Heirloom Tomatoes
2 Slices of Bacon
Pinch of Salt

Directions:

Bring the 4 eggs to a fast boil.  Let it boil for about 2 minutes and then remove from heat and let the eggs sit in the pan for about 5-10 minutes.

Slice your bacon into little pieces and cook in a small frying pan until the bacon is crispy.

Mash the avocado and slice the tomatoes into 4ths and set aside.

Cover your hard boiled eggs with cold water (this helps when peeling, trick I learned from Pappa Diehl). Peel the eggs and slice in half. Remove the yolk from 2 of the eggs (if desired) and mash all the eggs using a fork.

Blend the eggs together with your already mashed avocado.  Once the bacon is crispy poor the bacon into the mix including the bacon fat (this adds extra amazingness!!).  Add the tomatoes and season with a pinch of salt and blend it all together and DIVE IN.  I promise you will be licking your bowl!

    I tried this today for breakfast. Was so good. Wasn’t sure if I was going to like the eggs and avocados mixed with the tomato, but it was really good. I am definetly going to add this to my breakfast list.
