I’m always looking to keep things interesting with food but I have a tendency to find something I like, a lot, and want to find different ways of eating it. Zoodles are so easy and so good. You can use them and eat them the same way you would with pasta. Here’s another quick option to eat with zucchini noodles! It really doesn’t get any easier than this.
1 Chicken Breast
1 Large Zucchini
1/2 Cup Cherry Tomatoes (cut in half)
2 Garlic Cloves
Tablespoon Olive Oil
Salt/Pepper, if desired.
Start your grill on medium heat.
Marinate the chicken with olive oil, salt, pepper and onion powder. Once the grill is hot, place on the grill. Depending on the thickness of your chicken, cook on each side for 5 minutes or until crisp.
While the chicken is cooking, heat a medium sauce pan with a little olive oil. Add the chopped garlic and let cook until slightly brown.
As the garlic is cooking, use your julienne peeler to make the zoodles. Add the zoodles to the sauce pan and blend with the olive oil/garlic for about 3 mins. You don’t want to over cook them or else they become too soft.
Remove the zoodles from the heat and place into a bowl. Add in the diced tomatoes and mix together.
Chop the chicken as desired and add with the zoodles. Add salt/pepper, if desired.
Done and done – 20 minute meal! 🙂
