Watermelon Pico de Gallo

I always forget how amazing watermelon is, until I eat it.  Especially on a hot summer day!   Watermelon has everything you need to beat the summer heat.  It’s amazingly delicious and thirst-quenching.   After learning about the different Vitamins in my Micronutrient class, I’ve learned (in more depth) how incredibly important vitamins are for us and their mechanism functions in our body.  Here’s a little nerd talk for you –   Watermelon is an excellent source of Vitamin-A which is a powerful natural anti-oxidant.  It is essential for vision and immunity.  It also is required for maintaining healthy mucus membranes and skin.  It also contains Vitamin B6 (pyridoxine), Vit B1 (thiamine), Vitamin C and Manganese.  I won’t go into detail about each but just know they are all important and essential!   So enough nerd talk…!  I love my fruit salsa’s and this was my favorite so far.  Like all the fruit salsa’s I make, this goes well with anything.  Especially fish!

Ingredients (serving size depends on how much you want to make – I made a portion for 2 servings. Adjust as necessary):

2 Cups Diced Watermelon
1 Cup Diced Mango
1 Lime
1 Cup Chopped Cilantro
1/2 Cup Chopped Red Onion

Directions:

Cut the watermelon into little squares – add to a bowl.

Cut 1/2 a mango into little squares – add to the bowl.

Dice your red onion into small pieces – add to the bowl.

Finely chop the cilantro – add to the bowl.

Squeeze fresh lime juice and mix together.

Das it!

You can really eat this with anything – fish, chicken.  I paired this with shrimp screwers and it was perfect.  Or, if you want to use this as a salsa for a summer party, that works too!  Enjoy! 🙂
