Turkey Burgers with Cucumber Cilantro Salad

The weather is starting to get nice around here which makes me insanely happy!!  It also makes me crave lots of food that come off the grill and salads that refresh your taste buds.  This is a perfect and easy summer dinner!  Enjoy!

Turkey Burger Ingredients: (serving size 3):

1 lb Ground Turkey Meat
1/2 Red Pepper (cut into little pieces)
1/4 Red Onion
2 Cloves Garlic
Salt/Pepper
1 Egg
1/4 Eggplant (cut into thin pieces)
1/4 Avocado

Directions:

Mix together the turkey meat with red peppers, red onion, garlic, salt and pepper.  Use your hands and blend all together and divide into 3 burgers. Heat your grill and cook the Turkey Burgers for 5 minutes each side.

Place the eggplant cuttings on the grill and grill each side about 3 minutes or until chalked.

In a small pan, cook your egg sunny side up!

Place the eggplant on the bottom as your “bun”, top with turkey burger, runny egg and avocado on top.

Cucumber Salad Ingredients: (serving size 3)

1 Medium/Large Cucumber
1 Tablespoon Olive Oil
1 Garlic Clove
Handful of Cilantro

Directions:

Cut the cucumber into very thin pieces.

Dice the garlic and cilantro and mix together with the cucumber and blend together with olive oil.

Dive in and happy grilling! 🙂

      Hi Jamie, sorry just seeing this! I haven’t tried turkey burgers with jalapeno, I’m not big into too much spice so I don’t eat jalapeno’s! And Chili would be good but kind of heavy with a burger, no? You could just use the ground turkey and mix it with the chili to make turkey chili?? 🙂 Miss you!
