This was absolutely amazing!! I pretty much took all of my favorite things and blended them together. Per usual, I don’t have much time to dedicate to cooking intense meals these days. This took me less than 30 mins to make and it was amazing. It’s packed with protein, healthy fat and essential micronutrients. Great for a post work out dinner. I also threw in some plantains for added potassium and a carbohydrate source. If you’re in a jam with time and want a meal that will satisfy every taste bud you have – try this!!
Ingredients (1 serving):
- 1 Chicken Breast
- 2 Slices of Bacon
- 1 Avocado
- 1 Red Tomato
- 1/2 Cup Diced Cilantro
- 1/4 Cup Red Onion
- 2 Limes
- 1 Tablespoon Avocado Oil
- Olive Oil
- Salt/Pepper/Garlic Powder
- Optional: Side of Plantain
Directions:
Pre-Heat your grill on medium heat. Season the chicken with olive oil, salt, pepper and garlic powder. Place the chicken on the grill and cook on each side for about 5-7 mins.
While the chicken is grilling, heat a medium skillet and dice the bacon into little squares – cook until crispy.
Cut your avocado into mini chunks. Chop the red onion, red tomato and cilantro. Mix the avocado, red onion, red tomato and cilantro into a bowl and blend together.
Once the chicken is done, cut into little pieces and mix together with the avocado salad. Blend in the bacon and pour a little bit of the bacon fat into the mix. Top with the avocado oil and squeeze fresh lime juice into the bowl and blend all together.
Once all steps are complete – dive in and enjoy!
Optional: If you want to make plantains – cut the plantains into slices length wise. Heat a medium skillet with coconut oil and sautee each side of the plantains for about 5 mins or until golden brown.
