Quinoa Chicken Burgers

A lot of people always ask me if I ever eat off of “paleo” and to be honest, I don’t.  However, that doesn’t mean that anything non-paleo isn’t still nutritional for you.  For me, its just a personal choice.  Although, for my non-paleo people I wanted to incorporate something new.  This meal has all of your essential needs that are great for a post work out.  Loaded with protein, complex carbs, healthy fats and micronutrients from your veggies!

Ingredients (serving 4 burgers):

  • 2lb Ground Chicken (or turkey)
  • 1/2 Cup cooked Quinoa (any kind)
  • 1/3 Cup diced Red Onion
  • 1/3 Cup diced Pepper (I used yellow – can use green, orange, yellow)
  • 1 Egg
  • Slices Eggplant
  • Handful raw Spinach
  • 1/4 Avocado
  • Sliced Red Tomato
  • Salt/Pepper/Garlic Powder
  • Olive Oil

Directions:

Follow the directions on the package of your quinoa and get that going.

Preheat your oven to 400 degrees and slice the eggplant into thick pieces.  Coat with olive oil and place in the oven and bake for about 20 mins.

In a bowl mix together ground chicken, red onion, pepper, egg, seasonings (salt/pepper/garlic powder). Add the quinoa once cooked and blend all together.  Use 1/2 cup to mold into patties.

Heat a pan on medium heat and coat the bottom with olive oil.  Once the pan is hot, place your patties into the pan and cook on each side for about 5 minutes or until done.

Meanwhile, chop your tomato and avocado.

How to stack – use the eggplant as the “bun” and stack the burger on top.  Load it up with spinach, tomato, avocado and whatever else you desire!!   If you don’t like eggplant, you can always use portabello mushroom or sweet potato!  Also another non-paleo nutritional option is Ezekiel bread.
