With holidays around the corner it’s natural for all of us to start craving certain foods, especially sweets! In order for me to satisfy those cravings I need to get creative in the kitchen. This recipe was inspired through Kind Bars. I was just traveling recently and when I travel my go-to snack in desperate needs is Kind Bars. They are bars that are dense in nuts and glued together with honey! Who doesn’t like a blend of nuts and honey! I promise you’ll love these and they will for sure satisfy that cookie/sugar craving!
Ingredients (Makes about : 25-30 cookies):
- 4 Cups ground Almonds
- 2 Cups ground Walnuts
- 2 Cups Honey
- 1 1/2 Cup Dry Fruit (cranberries, raisins or even chocolate)
- 1 Cup Blueberries
- 1/2 teaspoon vanilla extract
- 1 teaspoon cinnamon
Directions:
In a food processor, process the almonds and walnuts separately. Blend together in a bowl.
Place the honey and vanilla in a saucepan and heat on medium heat until hot (when it starts to foam, its hot!).
Poor the honey in the almond/walnut mixture and blend together with a spoon. Note: this becomes very sticky!
Sprinkle the cinnamon, fruit and/or dry fruit and blend together.
Place in the refrigerator and let cool for an hour. The colder the “dough” is the easier it is to form into balls.
Preheat the oven to 350 degrees. Cover your cookie sheet with parchment paper and because it’s very sticky, I still recommend spraying a non-stick spray to the paper. Or cover your cookie sheet in non-stick (coconut oil would be best).
Wet your hands and grab 1/4 cup of the dough and roll into balls. Place on the cookie sheet about 2″ away from each other – I was surprised to how much these expanded!
Once you’ve rolled into balls and placed on the cookie sheet, take a fork and lightly push down in the middle to flatten them a little bit.
Place in the oven and bake between 15-20 minutes. Be sure to watch these closer to the 15 minutes to be sure they don’t burn.
Let cool for about 30 mins before diving in! Enjoy!! 🙂
