Yucca Mofongo

I was introduced to yucca about a year ago and I fell in LOVE.  Yucca is really the South American version of an American white potato but the taste is very different and to me, delicious!  Like potatoes, yucca is a very high starch and carbohydrate vegetable.  It also shares similar nutritional values as the potato.  I love discovering new foods and finding ways to incorporate them into fun meals.  Not only is this one fun but it’s delicious!  If you are prepping for a high intensity work out the next morning, I highly recommend eating some yucca to fuel your body for a successful work out!

Ingredients (serving size 2):

Mofongo:

  • 1 Yucca Root
  • 4 Slices of Bacon
  • 1/2 Small Red Onion
  • 4 Garlic Cloves
  • 2 Tablespoons Olive Oil
  • 1 Green Onion
  • Optional: Grass Fed Butter

Chicken:

  • 2 Chicken Breasts
  • Salt/Pepper/Garlic Powder
  • Coat with Olive Oil

Optional: Avocado, Tomatoes (whatever else you’d like to tower on top!)

Directions:

Turn your grill on to medium heat. Season the chicken with salt, pepper and garlic powder.  Place on the grill and cook each side for about 5-8 mins or until fully cooked through.

Peel the yucca and cut 1/4″ inch slices cutting width wise.  Place into a pot with water and add salt and olive oil.  Bring to a boil and let cook for about 20 minutes.  Make sure it’s cooked all the way – if you stab a fork and the yucca breaks, it’s done!  Once the yucca is down mash with a masher and add the olive oil and/or grass fed butter.  Add additional salt/pepper if desired.

In a medium pan sautee bacon, onion and garlic.  Once browned pour and blend together with the yucca.

Dice the green onion into small pieces and blend together with the yucca.

Top the yucca with the grilled chicken and avocado and add a drizzle of olive oil for some extra flavoring!
