EQD = Easy, Quick and Delicious. My cooking mojo! Most people believe that in order to eat healthy it has to be boring. In addition to that they believe that eating healthy and cooking is very time consuming. When in result, it’s neither of the two! Cooking is an art so you can create it in any which way you chose. If I had hours to spend my day cooking long glamorous meals, I would! Reality is, I don’t! Which is OK! Makes me get creative and simplify! After getting home late, starving and opening my fringe I think ‘what is the fastest possible meal I can make right now?’ and in result is, this! For all you busy bee’s out there, this is a great nutritious meal! Full of protein, healthy fat and loaded with micronutrients!
Ingredients (2 servings)
- 2 Chicken Breast (4-5 oz each)
- 1 Red Pepper
- 1 Yellow Pepper
- 1/2 Red Onion
- 1/2 Cup Chopped Cilantro
- 1 Lime
- 2 Tablespoon Olive Oil
- Optional: Avocado Oil
- Seasonings: Salt/Pepper/Onion Powder
Heat a medium/large pan with olive oil on medium-high heat.
Season the chicken with salt/pepper/onion powder. If you like spices, you can always add cumin, thyme, rosemary, etc.
Dice the chicken into cubes about 1/4″ thick (or whatever size you like!).
Once the pan is warm, place the chicken in the pan and mixed around/let cook for about 8-10 mins or until done.
While your chicken is cooking, heat an additional pan with olive oil and sautee the peppers/onions. Cook until fully done, 5-10 mins.
Once the chicken and peppers are done – mix the peppers in with the chicken and let cook for about 1 minute.
Remove from eat, top with freshly squeezed lime juice and cilantro and dig in!
Optional: You can add chunks of avocado to this as well OR you can add avocado oil as a ‘dressing’.
