As we all know I LOVE avocado. I am always incorporating guacamole into my meals. I wanted to switch it up so I decided to make an avocado puree and try this instead of my usual guac. – success! I can almost say that I prefer this over guac, which says a lot! Per usual, this is really easy and its DELICIOUS! Great meal for the upcoming summer months! It’s full of protein, healthy fats and loaded with micronutrients.
Ingredients (2 servings):
- Lean Red Meat of choice
- 1 Avocado
- 1 Tablespoon Olive Oil
- 1 Tomato
- 1/4 Red Onion
- 2 Kiwi
- 2 Small Lime
- Handful Diced Cilantro
- Salt/Pepper/Garlic Powder
Directions:
If you have a grill, place your grill on medium-high heat. While the grill is warming up, season your meat with salt/pepper/olive oil and garlic powder. Place on the grill and cook 5-8 mins on each side (depending on how you like your meat. For me, the bloodier, the better :p).
For the salsa: Dice tomato, red onion, cilantro and kiwi into small pieces. Place in a bowl and top with freshly squeezed lime juice (half to 1 full lime).
Scoop the avocado out of the shell and place in a blender or food processor. Add olive oil and fresh lime juice and puree. If it is too thick, add a little water and/or more olive oil and keep pureeing until you receive a thick yet small texture.
Once the steak is done – cut into small chunks (you can do this before you grill too). Place the avocado puree on the bottom of your plate, top with the steak and then kiwi salsa and dig in!
