As everyone knows, Summer is hands down my favorite season of the year. If only Connecticut could be 85 and sunny every day, all year round! With a lot of parties and bbq’s going on this summer I had to get creative on a finger food that would feed a group of people – in which I developed these! These sliders are great for parties, bbq’s or even snacks on the go! Very simple to make, full of all your essential nutrients; protein, healthy fat, vitamins & minerals and best of all, they’re delicious!
Ingredients (makes 20 sliders):
- 2lbs Grassfed Beef (you can use any ground meat – chicken, pork, turkey)
- 2 Large Cucumbers
- 1/2 Pint Cherry Tomatoes
- 1/4 Bag of Raw Spinach
- Salt/Pepper/Garlic Powder for seasoning
- Splash of Olive Oil
- Guacamole (avocado, cilantro, red onion, lime juice, dash of salt – please see previous post for full guacamole recipe)
Directions:
Place a large saucepan on medium heat and coat the bottom with olive oil (or coconut oil).
In a large bowl combine the ground beef with a teaspoon of salt/pepper, garlic powder and olive oil. Use your hands and mix the beef with the seasoning well. Using a tablespoon – scoop out the meat and roll balls into your hands and place to the side (on a cutting board/cookie sheet).
Once you’ve completed making all the balls, use a fork and lightly press the top to flatten into burgers.
Place in the pan and cook each side 3-5 mins (tops – remember these are small so they cook quick!).
When the burgers are cooked all the way through remove from the heat.
Dice the cucumber width wise to use as the foundation of your sliders.
Cut the cherry tomatoes in half.
Place 1 slider on top of each cucumber “bun” and top it with a raw spinach leaf, guacamole and a cherry tomato. Use a tooth pick to punch through to hold the sliders together.
