My favorite season is FINALLY here!! We have put the Winter blues behind us and moving along into Spring/Summer! As the days are getting longer and the temperatures are getting warmer, I crave fresh seafood the most! To celebrate my favorite season, here is a delicious and easy meal!
Sea Scallops provide 102% of your daily recommended intake of Vitamin B12. Vitamin B12 is an essential vitamin because it is needed for energy production, aids in brain & heart health, caters to healthy bones and supports DNA health which helps keep you looking and feeling young! In addition, they are a great source of Omega-3 fatty acids which fights inflammation within the body and are a great source of lean protein!
Sea Scallops are currently in season so get them while they are at their freshest!
- 1lb Sea Scallops
- Trader Joes 21 Seasoning Salute
- 1/2 Cup Diced Fresh Basil
- 1/2 Cup Cherry Tomatoes
- 2 Tablespoon Olive Oil
Heat a large skillet on medium heat with olive oil.
Season your sea scallops with Trader Joes 21 Seasoning Salute. Place in skillet and cook 4-5 minutes on one side and flip and cook 3-4 minutes on the reverse side (timing depends on the thickness of the scallops).
While scallops are cooking, dice your basil, tomatoes and place in a bowl. Mix with olive oil.
Remove scallops from the heat and mix together with basil & tomato mix.
