Walnut Cranberry Cookies

I went the entire month of January on a 30 day detox cleanse.  No sweets, no alchy, just clean eating and lots of exercising!  The 30 day ended this past Monday so I’ve been enjoying some treats since – back on the wagon tomorrow!  BUT, tonight I wanted to make something to snack on after my chicken soup!

I have this thing for dessert on Sunday nights, not sure why!  Anyway, I wanted to stay away from chocolate because that is really my go-to dessert so I decided to switch it up and make some cookies with cranberry and walnuts!  I’m not going to say that they are better than if they were made with chocolate or if chocolate was added to this recipe because I just love chocolate so nothing really compares!  However, this did the trick!  Happy Sunday!

Ingredients:

2 cup almond flour 
1/2 cup coconut sugar
1/2 cup coconut oil
1 egg
1/2 tsp vanilla extract
1/4 tsp salt
1/2 tsp baking soda
1/2 cup chopped walnuts
1/2 cup dried cranberries 

Directions:

Preheat oven to 375F

Mix all the above ingredients together but spoon or hands (sometimes I find it easier to just use my hands).

Take a 1/4 measuring cup and scoop out the batter and roll into balls.

Place on a cookie sheet with parchment paper.

Since these are flourless, they don’t expand when baking so push down on the tops of them to shape them into cookies or if you want to keep them in a ball, that’s fine too.  However you desire.

Bake for 15 mins and let cool.
