Bangin’ Turkey Burger

Just because I don’t eat bread doesn’t mean I can’t enjoy a burger still! And actually, I’ll take this ‘bun’ over bread any day!!   As usual, this meal is so easy to make and full of flavors.  All I have to say is – I love my diet!  Enjoy!!

Ingredients:

4 oz Lean Ground Turkey 
Diced Sweet Onion 
Diced Red Pepper 
Diced Shallots 
Salt & Pepper if desired
2 pcs of a sweet potato about 1/4″ thick (I cut from the middle of a medium size) 
1/4 Cup chopped mushrooms 
1/4 Mashed Avocado 
Coconut Oil

Directions:

First –

Preheat oven to 400 degrees.  Dice your sweet potato and place on a cookie sheet with a little olive oil.  Once the oven is pre-heated, bake for 20 mins.

Second –

Heat a medium skillet on medium heat. Take about a spoonful of coconut oil and let it melt into the pan.  Once the oil melts, spread around to surface the oil in the pan.

While the skillet is heating, place your turkey meat, sweet onion, red pepper, shallots and salt & pepper into a bowl.  Blend together by hand and form into a patty.  Place your patty in the skillet and cook on each side for 5-6 mins or until cooked.

While the burger is cooking, heat a separate skillet on medium heat – add another spoonful of coconut oil.  Once melted toss in your mushrooms and sautee about 5 mins or until done.

Remove the sweet potato from the oven, put your burger on top, then add the mushrooms, mashed avocado and top with sweet potato and boom!!
