Since it’s summer you’ll notice that I eat a lot of fish. My new obsession is to create yum fruit salsa’s to go with the fish. The fruit salsa will really make any fish taste really good! This also is another really good, easy and refreshing meal! Enjoy! 🙂
Ingredients:
White Fish of your choice (Halibut as pictured).
1 Mango
1 Small Tomato
1/4 Small Red Onion
Cilantro
Lime
Salt/Pepper
Directions:
Halibut:
Marinate the fish in olive oil, salt and pepper.
I grilled the Halibut but cook this how ever you’d like – broil, bake, pan fry, grill.
Salsa:
Dice Mango, Red Onion, Tomato, Cilantro and mix together. Top with fresh lime juice.
Place the salsa on top of the fish and enjoy!!!
Side note: For the side dish eat whatever vegetable you like. As pictured, I just boiled some broccoli and topped it with some olive oil.
