Tilapia with Red Cabbage Salad

This is an easy and perfect hot summer night dish!  It’s light and full of all the nutrition you need – protein, veggies and healthy fat!  You can make this with any white fish you like – Swordfish, Halibut, Mahi Mahi, etc.  I chose Tilapia for this and it was perfect!

Ingredients:

Tilapia Filet
Red Cabbage
Red Onion
Cilantro
Olive Oil
Avocado
Lime
Salt/Pepper

Directions:

Tilapia:

I grilled the Tilapia but you can cook this however you chose – broil, bake, pan fry, grill!  Tilapia cooks quickly, so watch it!

Red Cabbage Salad: 

Dice the red cabbage and mix with olive oil, red onion, cilantro, lime juice and salt/black pepper.

Guac: 

Mash Avocado and mix with red onion, lime juice and cilantro.
