These are amazing!!!! If you like sweet potato and you like pepper – dive in!! Came home post CrossFit and whipped this up. Very easy to make and took about 20 mins!! I think next time I’m going to add bacon to give it more flavor! :p But otherwise, this was really good! Try it out and see!! 🙂
1 Whole Large Red Pepper
1 Medium/Large Sweet Potato
6 oz of Chicken Breast
1/4 of a Red Onion
Salt/Pepper/Garlic Powder for seasoning
Pre-Heat the oven to 400 degrees. Cut the red pepper in half right down the middle and clean out the seeds. Place on a cookie sheet with a little olive oil and place in the oven and let roast for about 20 mins.
Peel and cut the sweet potato. Place the sweet potato in a pot and bring to a boil and let boil until done (about 5-10 mins tops. I also cut them thin so they will cook faster).
In a medium sauce pan, heat with olive oil and dice up the red onion and saute. In the meantime, season the chicken with whatever seasonings you like, I added basic salt/pepper/a little garlic powder. Cook the chicken in the pan with the red onion.
Once the sweet potato’s are done, mash and add a little olive oil (you can use coconut oil or grass fed butter too).
Once the chicken is done cooking, dice into little chunks and mix together with the sweet potato.
Remove the peppers from the oven and add the sweet potato/chicken/onion mash into the peppers and top it with scallions.
