Potato Spg with Sweet Sausage & Bacon

Rumor on the street is white potatoes are now Paleo approved!!  Therefore, what do I do? I turn them into spaghetti!  This meal was delicious.  If you like your baked potato’s stuffed with heaven then imagine what it’s like when you turn that into spg and fill it with whatever your heart desires!  Eating this you feel like you’re eating a “cheat” meal when in reality, you’re not. I highly recommend trying this!!!

Tools:

Spiralizer or Juliene Peeler. Picture above used a spiralizer.

Ingredients (2 servings):

  • 1 Large White Potato
  • 1/2lb Sweet Sausage (no casing)
  • 3 slices of Bacon
  • 2 Cups Spinach
  • 1 Clove Garlic
  • 2 Tablespoon Olive Oil
  • Seasoning: Salt/Pepper, if desired

Directions:

In a medium heat fry pan, add your sausage and chop up into little chunks.  Cook until the sausage has turned brown and remove from the heat (will take about 10-15 mins).

While the sausage is browning, use your spiralizer or juliene peeper to peel the white potato (peel the skin from the potato if desired, picture above there is no skin).

Once the sausage is fully cooked, remove to a bowl and coat the pan with olive oil. Add the garlic and shallot and let cook for about 2-3 mins (be careful with this because this cooks really fast) and white potato spg. Cook for about 5-8 mins until it is cooked through.  (You don’t want to cook it too much so it falls apart so watch this to keep it to the perfect consistency of your liking.)

Pre-heat a small fry pan to medium/high heat.  Slice the bacon into little squares and cook until crispy (5 mins).

Poor the bacon (including the fat) and sausage in with the white potato.  Add the spinach and sautee together until spinach is fully cooked (1 min tops!).

Place on a plate, season with salt and pepper if desired and dig in. NOM NOM!
