The other week I was asked what my favorite vegetable was. This is a really hard question for me to answer because I have sooooo many favorites. However, if I had to narrow it down to my #1, it would be brussel sprouts baked and sauteed with bacon. There are many health benefits to brussel sprouts – they are full of vitamins (very high in Vitamin K), minerals and they are high in fiber. Mix them together with a little bacon and you have a perfect side dish that goes well with everything; pork, chicken, fish, steak. Another great thing is this is so easy to make! Enjoy all!
Simple Dairy Free Caprese Salad with Basil/Cilantro Pesto
A lot of my posts lately have been triggered towards Italian meals. Not sure why! haha!! But regardless, they are yummy!! Now that the weather is slowly starting to warm up I’m craving fresh and refreshing things to eat. Caprese salads are one of my favorite salads for that reason, they are really light and fresh. Since I don’t eat dairy, I just made a different version to suit my diet needs. Hope you all enjoy it! This goes well with just about anything…I made a side of chicken and ate it with that for my protein. Enjoy!
Zoodles with Sausage Meatballs
For starters, if you don’t have a julienne peeler – buy one now! One of the best kitchen tools I own! They are very inexpensive and amazing! I went to dinner with one of my girlfriends in Boston this past weekend to an Italian Restaurant. I was inspired by all the Italian dishes. Seeing that I don’t eat pasta anymore, I needed to get creative! I do miss having pasta (just don’t miss how it makes me feel). My Mom also used to make us homemade Spg & Meatballs every Sunday growing up, so I turned a craving and a tradition into a meal. I used a julienne peeler on the zucchini to make ‘zoodles’ and I took sweet sausage out of the casing and rolled into balls to make meatballs. I normally will make my own fresh sauce but I was very hungry so I used Trader Joes homemade sauce that passed my Nutrition Facts standards. 🙂 Hope you guys enjoy this as much as I did. It’s very easy, took about 20 mins, if that. Quick, yummy “Italian” meal! Enjoyyyy!!
Eggplant Torta
This is another Paleo “Italian” like dish that my study buddy and I decided to try out! I love eggplant, I love peppers and I love spinach so why not mix it all together and layer them on top of each other?! Eating this you don’t even feel like you’re eating ‘clean’ because it’s that good. It’s very healthy, fresh, delicious and light! I ate this with some grilled chicken on the side and it was a perfect meal! Highly recommend! Happy Eating! 🙂
Red Cabbage Salad
This side dish is really good with anything! I love to eat it with some sort of seafood because both are very light and go well together. But regardless, it goes well with everything. Per usual, it’s very easy and full of flavors. Try it out!
Sweet Potato Stuffed Pepper
These are amazing!!!! If you like sweet potato and you like pepper – dive in!! Came home post CrossFit and whipped this up. Very easy to make and took about 20 mins!! I think next time I’m going to add bacon to give it more flavor! :p But otherwise, this was really good! Try it out and see!! 🙂
Power Banana Smoothie
I’ve been really busy running around so I needed something quick to hold me over til dinner. I made this Power Smoothie that was delic! I love my sweets so to me this is more of a treat than anything else! If you’re looking for a good morning snack, try this! I highly dislike protein powders but if you’re looking for a protein shake, vanilla or chocolate protein powder of your choice would work in this too!
Shrimp/Kale 15 Minute Dinner
I got a lot of attention on this meal so I figured even though it’s super easy to make, I’d add it to the blog! All you need are a few simple ingredients, 15 mins of your time and dinner (or lunch) is served! Enjoy! 🙂
Yellow Squash Ravioli
I honestly can’t remember the last time I had ravioli. Even though these aren’t the real thing they came pretty close and I was shockingly surprised to see how well they turned out! They are a little fragile so be careful when making these. They most definitely hit the spot! You can get creative and fill these with whatever you like. I eat a strict clean diet so I don’t eat cheese but these would be pretty amazing with cheese if you do! You can also fill them with other meat options, sausage, beef, etc. Get creative and have fun!
Hot Coco
I managed to fly to and from China for business and stay healthy but spent a few hours in a room with 1 sick 2 year old at my nieces Christening and caught a cold! After our snow storm and it being -8 degrees outside, I wanted something besides hot tea and water to nurse this cold. I created this not really expecting it to taste as good as it did. If you have a sweet tooth like me and love chocolate, you’ll love this! What’s better than liquid chocolate :p Enjoy!
