Quick Dinner!

After the WOD tonight I was starrrrrrrving so I needed to make something easy, quick and of course tasty!  I have some-what of an obsession with turning my veggies into spg for a few reasons.  One, they cook a lot faster than normal so it helps with the cook time.  Two, because I don’t eat pasta it helps fill in those pasta cravings and three, they are delicious and fun!   This meal took me all of 20 mins to make! Simple, easy, yummy!

Morning Breakfast

Breakfast is my favorite meal of the day, hands down!  I’ve always been a breakfast person (explains my obsession with my pancakes!).  I’m NOT a morning person so I find myself every morning running around trying to leave the house, so it’s important for me to make a quick breakfast! This morning I made this breakfast which takes all of 4 mins to do!!   I used the left over homemade breakfast sausage (recipe is on the blog below under Sunday Brunch), handful of spinach and 4 eggs.  I know people get creeped out by spinach but spinach adds a lot to the most important meal of your day.  It’s full of nutrients, fiber and iron!   This breakfast is also full of  protein so it keeps you full!! Dinner Experiment – Zucchini Boats

This was a huge experiment that actually turned out to be amazing!! A lot better than I thought it was going to be!  I opened my re-fridge to see what my options were for dinner.  I pulled out what I had and what I was in the mood for and out came Zucchini boats!  I’ve seen the zucchini boats on other blogs but I filled them with what I had!  You can get creative and fill these with whatever you like – have fun with it!

The BEST Paleo Cookies – Highly Recommend!!

Right now I’m doing a Whole30 so I haven’t had any chocolate/honey/maple syrup, etc. since the beginning of the month.  I’m about ready to go crazy!   I’m aiming for a goal so lets hope my 30 day hard work pays off.  BUT once I’m done I am rewarding myself with the best Paleo cookies I have yet to try!!  I promise you’ll love them!  I can’t take full credit for these, I found these on a grain-free blog but I did modify it a bit to my liking!

Sunday Morning Brunch

I have a love hate relationship with Sundays.  They are amazing relaxing days but it’s also the day before a full 5 days of work ahead..sigh!   Growing up every Sunday I would wake up to the smell of my Dad making homemade breakfast potato’s for Sunday Brunch.  He would always make us his infamous pancakes, eggs, sausage, bacon, list goes on..!  As a kid, I always looked forward to those meals so in my adult life I try to do the same but keep it friendly to my diet.

This morning I decided to make homemade pork sausage!  I’ve been wanting to try this for a while but was nervous to how it would turn out!  They were delicious but I was a bit shy on the spices worried that I was going to over spice them but for my first time, they were delic!  I will most definitely be making these again!
