Coconut Chocolate Balls

Can you believe it’s already the 4th of July!!   If you have a bbq to attend or hosting one this holiday weekend, here is a great treat you can provide!

The base of the balls are dates.  Did you know: Dates are part of the fruit family and come from my favorite plant, the palm tree.  They contain a wide variety of essential vitamins and minerals such as, calcium, iron, phosphorus, sodium, potassium, magnesium and zinc.  Dates also provide a great source of energy, sugar and fiber.  Dates contain zero saturated fat, trans fat and cholesterol making them a blood pressure and heart healthy treat.   These balls contain 5 ingredients and can whipped together in 10 minutes or less.  Just be careful, they are highly addictive! 🙂

Healthy Nutella

Since I have the biggest sweet tooth, I am always looking for different ways to satisfy those cravings!  Nutella is one of my favorite treats and the best part is it can be used as a breakfast essential or a sweet treat after lunch or dinner.  In my attempt to duplicate Nutella the best way I can, this is the result!

Minus the delicious flavor of hazelnuts they also contain great health properties.  They are rich in mono-saturated fats, full of vitamins and minerals, high in Vitamin E and B, cater to a healthy metabolism, good for bone health, contains folate, high in fiber and research shows that they are an anti-cancer super food.

This is really easy to make, although, is a bit messy – warning! – but the end result is well worth the mess.  You can enjoy this on a piece of Ezekiel bread for breakfast or my Paleo rolls (recipe found here: https://thedailydiehl.com/2015/03/05/bacon-sandwich-blt/).  You can even get creative and make a crepe out of egg whites and fold it with strawberries and a scoop of the nutella!  The options are endless!

Oatmeal Pancakes with Peanut Butter Syrup

As most of you know I have a thing for pancakes. I am always looking to expand my creativity with what type of pancakes  I can create next.     It is amazing what a few ingredients blended together can create!   These pancakes are perfect for post work outs. They are loaded with complex carbohydrates to replace those glycogen stores, protein to feed and build those muscles and essential minerals to aid in muscle energy.  These pancakes are guilt free and will leave you feeling satisfied, healthy and energized!  Enjoy!!

Butternut Squash Spaghetti

If you don’t already, buy yourself a spiralizer!  You can purchase them on Amazon.com or Bed Bath and Beyond stores.  It will change your life, I promise you that! I’m currently taking a Food Science class (which I love!)  I was watching a lecture on grains and flour, the importance and nutrients behind each and instantly got a craving for some ‘pasta’.  Luckily, I had a butternut squash in house, took my spiralizer out and TA DA!  Not only did this take 25 minutes to prep and cook, it satisfied any type of Italian and/or pasta craving I had. Additionally, it has a lot more flavor and is more tasteful than pasta! Win/Win situation all around.  Pictured, I mixed this with chopped kale, shredded brussel sprouts and sauteed onion but you can really mix this with whatever veggies you desire – asparagus, eggplant, peppers, etc.  For protein, I mixed this with shrimp but a runny egg does the trick too!  Enjoy guys!! :p

As we enter the cold months of the New Year, here’s a great recipe to keep the warm weather spirit alive.   When I’m craving summer yumminess this is my go-to.   This bowl is filled with a variety of nutrients from complex carbs, healthy fats, vitamins and minerals.  You can pair this with any protein of your choice – fish, chicken, steak!  The beauty of this beyond the taste is that it goes with everything.  Enjoy!

Apple Crisp

Can you believe that it’s already November!  Where does time go?  Fall is in full effect which in result makes me crave all the holiday festive sweets.  I was left with a bunch of apples from apple picking but how many apples can you eat before you don’t want to eat a raw apple anymore?  At times cooking is therapy to me.  After completing a 2 hour exam, I wanted to zone out and create something seasonally delicious that is also conducive to my eating.   So, what better than an apple crisp?   As Thanksgiving is approaching, here is a healthy dessert alternative to help you stay on track during your holiday.  Enjoy!
