Strawberry, Banana & Coconut Water Smoothie

I was in a health food deli type place and noticed that they made some drinks with coconut water as the base.  I was very curious to try it since I don’t really like to drink almond milk (think I have a nut allergy).  I made this and was blown away! A lot of people don’t really care for coconut water but you can’t taste it at all.  Def going to have fun with these smoothies so stay tuned for more! 🙂

Easy Summer Dinner – Chicken, Grilled Mix Veggies, Sauteed Brussels with Homemade Guac!

It’s been a while since I’ve last blogged as my life has been a bit of a rollarcoaster.  For those of you who do not know, my Dad had passed away on May 3rd after battling lung and brain cancer.  The experience is still so surreal!  So, I apologize I haven’t been able to really cook/spend time on my blog. BUT – I’m back!!

As most know, I love making easy/quick/flavorful meals.  This is one of my staple dinners which I love!  I am a BIG grill person, I think that everything tastes best on a grill so you may find a lot of my posts for the next few months mostly from the grill! 😡

Tuna Steak with Kiwi/Avocado/Cilantro Salsa

The weather is FINALLY starting to get nice so I’m craving summer meals!! I’m also going on vacation on Saturday so my mind is def set in tropical mode.  I love tuna steaks but wanted to make something a little ‘summery’ to go with it.  I’ve made strawberry and mango salsa’s before but wanted to switch it up and tried it with Kiwi – a fruit that I rarely ever eat.  Always go with your instincts because it turned out really yum!!  Def a good, easy and quick summer meal!

30 Minute Lemon & Rosemary Chicken

My life is a bit crazy.  I’m up super early in the morning, I work all day, spend my nights doing my fitness routine so by the time I get home at night I really don’t have motivation to prep lunch. So, I chose to not sleep in and prep early in the morning!  Since I’m on a tight schedule to get to work by 830, I need to make things that are super quick and easy.  I made this, this morning and it was yummmmmy!  Really easy, juicy & flavorful!

Tonight I wasn’t in the mood to cook anything crazy and since I have a huge sweet tooth I decided to make some waffles. Mmmmm!!  So easy and really good!  I honestly can’t really tell much of a difference between regular flour waffles and almond/coconut flour!  Don’t knock it til you try it!

Butternut Squash Lasagna – My favorite!!!!

If you often crave Italian dishes but shy away from pasta, butternut squash is for you!   Butternut squash is a nutrient dense food that also allows you to get creative in kitchen! Growing up in an Italian family, lasagna was a staple meal in my family.    Since processed pasta and cheese is no longer part of my lifestyle, I brainstormed an idea that is.  And here you have it!  This dish is very family friendly!  Because of the sweet flavors found in the sausage, butternut squash and tomato sauce, the kids will love it, too!!   I promise you’re going to want to lick the plate, so  dive in, savor the moment and enjoy every bite!

Paleo Tuna Salad

One of the foods I really miss being on Paleo is tuna salad.  I used to eat tuna salad all the time and haven’t really since I started it because I don’t eat mayo!  I’ve been missing and craving it so I bought some and was thinking about how to make a tuna salad that is friendly to my diet.  A friend at the gym told me to mix it with avocado or olive oil!  Brilliant!!  I can’t take full credit for this one but I wanted to share it because it was soo good! A lot better than I expected!  Don’t knock it til you try it!

Pork and My Favorite Greens!!

I eat a lot of chicken, ground turkey and fish.  I decided to switch it up to try something different.  I forgot how much I really enjoy pork!! Growing up my Mom would make us pork chops with fried beans and lots of apple sauce filled with a ton of sugar, so this what a little different than what I’m used to but it was still yum in my tum!  I took pork and mixed it with all my favorite green veggies!
