I’ve had some digestive issues lately so I’ve been veering away from meat and switching my diet up, a tad! I’ve been eating a “paleo-like” diet for almost 4 years straight now so I wanted to try to incorporate other natural whole foods back into my diet – time to switch it up! Change is good!! This was a very impulsive creation I put together in one of my moments of getting home late and needing something delicious but quick to eat! As most of you know, I love avocado, cilantro and lime so this was a no-brainer for me as it’s a good “go-to”. However, I’ve added some quinoa on top of this for some complex carbs, extra protein and of course flavor!
Summer Sliders
As everyone knows, Summer is hands down my favorite season of the year. If only Connecticut could be 85 and sunny every day, all year round! With a lot of parties and bbq’s going on this summer I had to get creative on a finger food that would feed a group of people – in which I developed these! These sliders are great for parties, bbq’s or even snacks on the go! Very simple to make, full of all your essential nutrients; protein, healthy fat, vitamins & minerals and best of all, they’re delicious!
Cod with Grilled Zucchini Noodles & Avocado Sauce
Did you know: Cod is one of the best things you can eat – it’s loaded with protein, high in healthy fatty acids (good for heart health), niacin (helps lower cholesterol) and Vitamin B12 (energy levels). When people view food they normally only look at the macronutrients behind it (protein, fat and carbohydrates) but what people don’t know is how important the micronutrients are, as well! Yes, cod is loaded with protein but it’s also full of tons of other amazingness that keeps our body healthy and prevention of chronic diseases (such as high blood pressure, heart conditions, diabetes, etc.). It’s important to know what you’re eating and even better, enjoying it!! I grilled the cod and paired this with grilled zucchini (you can saute this if you don’t have a grill) and blended it with a basil/avocado sauce. Total meal time: 15 mins. Delicious!!!
Sesame Tuna and Mint Pea Mash
Summer is here, finally!! Right now, fresh fish is on sale all over the place. Because fish can get expensive I tend to shop around and buy whatever is on sale and figure out different ways of pairing the fish with fruits and veggies. As you know, I love my fruit salsa’s with fish but I wanted to try something different. I remember hating peas as a kid but in my adult-life I’ve grown to actually love them. Normally, I eat peas just plain as is but I’m on this mint kick and was curious to know what would happen if I blended mint and peas together. Don’t knock it til you try it! Made great flavoring to go with the tuna. Going to be my new summer favorite! This meal was very easy, quick and of course delicious! Perfect Summer Night Dinner – White Fish with Fruit Salsa
I could not be more happy knowing that the best season is approaching us – Summer! There is nothing more that makes me happy then eating fresh fish grilled every night when it’s 80 degrees out! It’s really the best way to live. In my day-to-date I try to consume 1 meat product and 1 fish product for my dinner and lunches. I prefer to eat fish at night only because it digests easier than meat, so it’s light and it cooks very quickly! This is a great meal to enjoy on a perfect summer night with family or if you have friends over!
Steak and Avocado Puree
As we all know I LOVE avocado. I am always incorporating guacamole into my meals. I wanted to switch it up so I decided to make an avocado puree and try this instead of my usual guac. – success! I can almost say that I prefer this over guac, which says a lot! Per usual, this is really easy and its DELICIOUS! Great meal for the upcoming summer months! It’s full of protein, healthy fats and loaded with micronutrients.
Easy, Quick, Delicious Chicken Dinner
EQD = Easy, Quick and Delicious. My cooking mojo! Most people believe that in order to eat healthy it has to be boring. In addition to that they believe that eating healthy and cooking is very time consuming. When in result, it’s neither of the two! Cooking is an art so you can create it in any which way you chose. If I had hours to spend my day cooking long glamorous meals, I would! Reality is, I don’t! Which is OK! Makes me get creative and simplify! After getting home late, starving and opening my fringe I think ‘what is the fastest possible meal I can make right now?’ and in result is, this! For all you busy bee’s out there, this is a great nutritious meal! Full of protein, healthy fat and loaded with micronutrients!
Bacon Sandwich (BLT)
Since I started Paleo I have given up bread 100%. I will go a year-plus without eating a sandwich and I’m totally cool with that because I love the way I eat. However, that doesn’t mean I don’t miss the occasional sandwich for lunch! I wanted to create a bread replacement so I could enjoy a nice sandwich every now and then so I created this “bread” made out of cashew meal and unsweetened apple sauce. I was unsure to how this was going to turn out but I was overly surprised and I had to conscientiously stop myself from eating all 4 of them – they are that good! So what better to put on a sandwich then, bacon! One of my favorite things about this “diet” is that bacon is one of my primary protein sources. I have bacon every.single.day. It’s amazing, I love it and I never get sick of it! Get creative and put whatever you’d like on here!
Pineapple Shrimp
For those of you that know me – I am a big beach, sun, warmth, tropical person. I really do not care for the Winter months. In order to ease my seasonal depression I like to incorporate tropical and warm climate fruits into my foods. I was inspired by this recipe from back in my Chinese food eating days. A local Chinese take out restaurant that I used to order from makes a really good pineapple fried rice. Seeing that I’m a bit of a health nut I wanted to turn my craving into my healthy version of that. So, I created this dish to help satisfy that craving and OH did it!! Probably one of the easiest meals I’ve made and one of the best! Try this out – I promise you’ll love!
Potato Spg with Sweet Sausage & Bacon
Rumor on the street is white potatoes are now Paleo approved!! Therefore, what do I do? I turn them into spaghetti! This meal was delicious. If you like your baked potato’s stuffed with heaven then imagine what it’s like when you turn that into spg and fill it with whatever your heart desires! Eating this you feel like you’re eating a “cheat” meal when in reality, you’re not. I highly recommend trying this!!!
