Just because I don’t eat bread doesn’t mean I can’t enjoy a burger still! And actually, I’ll take this ‘bun’ over bread any day!! As usual, this meal is so easy to make and full of flavors. All I have to say is – I love my diet! Enjoy!!
My Favorite Smoothie!
I try not to drink these that often because I am highly addicted to them so when I do have them they are a big treat for me! I tend to really drink them on the weekends after my work out as my post work out snack in between breakfast and lunch! There’s really nothing not much to them. It’s amazing what little ingredients can taste like all blended together! Hope you enjoy it as much as I do!
Walnut Cranberry Cookies
I went the entire month of January on a 30 day detox cleanse. No sweets, no alchy, just clean eating and lots of exercising! The 30 day ended this past Monday so I’ve been enjoying some treats since – back on the wagon tomorrow! BUT, tonight I wanted to make something to snack on after my chicken soup!
Meal Prep!
So a lot of people have been asking me what it is that I buy when I go to the grocery store and how do I know what to buy, etc. There really is no difference in how I shop compared to other’s that aren’t on a ‘paleo’ life style diet. The key for me is to not go down any isle at the grocery store – all the crappy/processed foods are in the isles.
Coconut Encrusted Sole
My go-to white fish is usually Tilapia but this week I wanted to switch it up! Fairway Market has great fresh fish, they cut the filets right there in front of you so the guy sold me on Sole! I think Tilapia is still my go-to but this was still yum!
Butternut Squash Hash
Another Sunday Brunch success!! Since I spent most of my Saturday early mornings jumping out of bed to get to my Saturday WOD, I don’t really have time to relax and enjoy a good breakfast so Sunday’s are my favorite breakfast days. I normally love to play around and make pancakes or waffles but I’m doing the Whole30 so I haven’t been able to do that since before Jan 1st!! The challenge ends on Thursday so I’ll be sure to post some pancake and waffle recipes this month!! But in the meantime, this was really a breakfast of Champs!
Shrimp and Greens!
Spent the day yesterday with my family and by the time I got home I was super hungry so this is what I came up with! This is some of my favorite ingredients mixed into a pile of yummy-ness!! This meal is great for lunch or dinner. If I had avocado’s I would of made some homemade guac to add to the green as well! 🙂 Enjoy it! As usual, its a simple, easy and really yummy meal!
Spaghetti Squash with Ground Turkey Meat
If you haven’t noticed already I like to make meals that are simple, quick and full of flavors! My week schedule is super busy so I try to pick meals that are easy and less time consuming. After a crazy week of work and my evening work outs I was so looking forward to having a rest day! Since it’s freezing outside I’m in a bit of hibernation mode so I was looking forward to just going home after work and enjoying a warm comfort meal. This is one of my go-to meals, it’s super delicious and healthy! If you’ve never tried or had spaghetti squash I’m about to change your lift! Try it!!
Lunch – Brussel Sprout Hash with Chicken
Last night before yoga I had to quickly make my lunch for today! I opened my refridge, looked to see what ingredients I had and I whipped this up! The more the veggies, the happier the tummy! If you’re looking for something quick and delicious – this is a good meal! Feel free to play around and add whatever else you’d like!
My Favorite Snack!
This is most definitively my favorite snack! I have it every day as my 2nd meal and I look forward to it every day! It’s almost like eating a dessert! I need my banana’s to help with leg cramps – every time I stop eating them I always wake up with crazy cramps in the middle of the night, so it’s a win/win situation for me. I love banana’s and it helps keep away the cramps.
I’ve tried a lot of different branded almond butters that are out there as I’m always up to try new products but out of everything that I’ve tried, Trader Joes unsalted raw almond butter is by far my favorite almond butter and another plus, it’s only $5.99. Most almond butters are any where from $8-$11/jar! So it tastes the best and its the cheapest – again, win/win!! This is a guilt free snack that keeps me full until lunch time!
