I think my Italian blood shined with these! I grew up in a family where every Sunday we’d have my Mom’s homemade spg & meatballs with her homemade sauce! Since I started Paleo I’ve been lacking that. Last night I wanted to make something quick but good but also was craving some meatballs. So I put together what I had and this was the outcome. Very very good!! I ate them with my fav, spg squash but you can eat them with whatever veggie you want. Hope you enjoy!
Cilantro/Pesto Chicken Spg Squash
With school I haven’t really had much time to make dinners. I needed a mental health break so I took the past 2 days off from school and just focused on getting a good work out in and getting back to what I enjoy doing, creating random meals! 🙂 I will put Cilantro on anything and love it, I just love cilantro. I had Spg Squash that I made the night before and some Brussels so I created this dish. Back to school work tonight so enjoy ya’ll!
Shrimp Lettuce Wrap Taco’s
Not really much to say about these other than they are REALLY good. Like most of my meals, it only took about 30 mins to make these. You can use any type of fish you’d like, I had shrimp so I used shrimp! But these would still be good with Tilapia or any white fish! Great end of summer meal, quick, easy and delic! 🙂
Oatmeal Pancakes
I woke up on a Sunday morning craving pancakes, I LOVE pancakes. Haven’t made them in a while so decided to get creative with what I had. I’ve recently put some grains back into my diet for a bunch of reasons. So, I know these aren’t Paleo but they are still good and healthy for you! Oats have a wide array of Vitamins, Minerals, Antioxidants, they carry complex carbs (meaning they are low sugar carbs which fuel the body and produce energy or “ATP” – thanks Anatomy!), Iron, Protein and are high in Fiber. These are so so easy to make! Hope you guys enjoy these as much as I did! If you’re craving pancakes but want to stay healthy – try these!!
Almond Butter Chocolate Bites
I got this idea from a recipe I found on FastPaleo.com. Everyone knows that I have a huge sweet tooth so I wanted to give these a shot and holy amazeballs, these are good!! I’ve made them twice, once with no fruit and the second time I added banana in the mix. Highly recommend! If you have a sweet tooth, like me, and want to stay Paleo, try these!! I will warn you that they are very rich so it def satisfy’s that craving. Maybe eat these and chase them down with some Unsweetened Coconut/Almond Milk. Enjoy!! 🙂
Sugar-Free Mojito’s
Mojito’s are one of my favorite drinks if not my favorite mixed drink but I really hate consuming all the sugar – bad hang overs and makes you feel stomach sick. I’m not a big drinker to begin with so when I do actually drink I want it to be worth it. I decided to order this one day but had asked the bartender not to add the sugar. EVERY single time I order it, the bartender/waiter always look at me funny saying that mojito’s are sugar – right, exactly!! But don’t knock it til you try it!! Last weekend I was in the Cape and wanted to attempt making them on my own…it’s def a work in progress, but I wanted to share this with you as this has become my favorite and signature drink! This cocktail is refreshing (yes B, REFRESHING! :p) . And no, this is not paleo but I wanted to share in hopes that you would enjoy it as much as I do! #paleowater
Cilantro/Arugula Pesto Pork Burgers
Last night I was insanely tired from my day and post WOD but was craving something yummy to eat so I forced myself to get creative in the kitchen and whipped this up in 30 mins! I eat a lot of chicken so I wanted to switch up my protein source by purchasing ground pork. I’ve never really cooked with ground pork (besides my bfast sausages) so I wasn’t sure how this was going to to turn out! It wasn’t too shabby! I will definitely be cooking more with ground pork, so stay tuned! Enjoy! 🙂
Halibut with Mango Salsa
Since it’s summer you’ll notice that I eat a lot of fish. My new obsession is to create yum fruit salsa’s to go with the fish. The fruit salsa will really make any fish taste really good! This also is another really good, easy and refreshing meal! Enjoy! 🙂
Tilapia with Red Cabbage Salad
This is an easy and perfect hot summer night dish! It’s light and full of all the nutrition you need – protein, veggies and healthy fat! You can make this with any white fish you like – Swordfish, Halibut, Mahi Mahi, etc. I chose Tilapia for this and it was perfect!
Coconut Shrimp
I went out to dinner recently and ordered coconut shrimp app which was amazing. Clearly, it was not Paleo but you can transform any ‘non-paleo’ meal into paleo! So – ta da!! If you’re looking for something easy and delic as an appetizer or even a meal, definitely try this!
